Italy is one of the culinary centers of the world. Each of its great cities has its own exciting and colorful cuisine. In this class, our chef will lead a hands-on experience in preparing some of the regional cuisines that have made the Italian kitchen justly famous. Sample and learn how to make traditional recipes as you would in an Italian home. Buon appetito!
Robert Calcagno, DDS, is a native of Rochester with family ties to Valguarnera Caropepe, Sicily. Although he has taken classes at the Institute of Culinary Arts, he has learned primarily from cooking with his mother as a child and by teaching himself through family recipes.
Menu: Cannellini bean puree on crostini, linguine su crema di zucchine, pork scaloppine with cream sauce, tomato salad, panna cotta.
Menu: bruschette, pasta alla norma, Sicilian braised chicken thighs with greens, torta alle mandorle e arancia (almond orange cake).
Menu: On Monday, November 13, we visit Abruzzo, with a brief stopover in Sicily.
Eggplant caponata, the Sicilian appetizer of eggplant, sweet pepper, onion, celery, and tomato, served on crostini.
Our pasta and main course will be pasta alla chitarra with pallottine - a dish typically prepared in the province of Teramo, Abruzzo - and braised pork and beef.
Insalata all'abruzzese, cold salad of green beans, sweet peppers, zucchini, tomato, and onion seasoned with basil, oil and vinegar.

Register through the links above. Registration links will be provided two weeks before each cooking class. During week 1 only Casa members with maximum of three guests can sign up. During week 2 non members can sign up.
Refund policy: If you cancel more than one week before the cooking class, you will receive a full refund. No refund will be provided to those who cancel the Wednesday prior to the event or later.
